中文摘要: 蓝莓含有大量功能活性物质,花青素是蓝莓中的主要活性成分。花青素具有多种生理功能,开发利用价值极高。为了更好地了解蓝莓花青素的生理功能特性,该文对蓝莓花青素种类结构、吸收代谢及抗氧化、降血糖、降血脂、抗炎抑菌、调节肠道菌群等的研究进展进行综述,为今后蓝莓花青素的深入研究和开发利用提供依据。

Abstract:Blueberries contain high levels of biologically active small molecules.The most prevalent of these small molecules are the anthocyanins.Anthocyanins possess many beneficial physiological functions,making them a high value target for development and utilization.To provide insights into the physiological functional characteristics of blueberry anthocyanins,this paper reviewed research progress into species specific blueberry anthocyanin structures,their absorption and metabolism,and functional properites,including antioxidant,hypoglycemic,lipid lowering,anti-inflammatory,and bacteriostatic effects,and intestinal flora regulation,providing a basis for further research,and for development and utilization of blueberry anthocyanins.
