中文摘要: 即食水产品深受沿海地区消费者的喜爱,考虑到其加工方法的特殊性,食用即食水产品容易造成食源性疾病。对即食水产品的安全性问题进行分析综述,并针对即食水产品的安全问题,对生产中的安全控制技术、检测技术和杀菌技术进行介绍,以期对即食水产品的安全性问题解决提供思路。
Abstract:Abstract:Ready-to-eat aquatic products are popular among consumers in coastal areas.Considering the particularity of its processing methods,eating ready-to-eat aquatic products can easily cause foodborne diseases.It analyzes and overviews the safety issues of ready-to-eat aquatic products,and presents safety control technologies,detection technologies and sterilization technologies for production in response to the safety issues of ready-to-eat aquatic products in order to provide the idea for solving the safety issues of ready to-eat aquatic products.
