中文摘要: 以碗形海蜇皮为研究对象,运用质构仪进行了TPA和剪切力测试,分析了不同取样半径对硬度、弹性和剪切力的影响。结果表明:取样半径在次外环、外环处对硬度影响最显著,硬度由大到小为次外环、次内环、内环、中环1、中环2和外环,硬度变化范围为10 137.896 g~15 883.456 g;取样半径在内环、外环处对弹性的影响最显著,弹性由大到小为内环、中环2、中环1、次内环、次外环和外环,弹性变化范围为0.57~0.81;取样半径在次外环、中环2处对剪切力的影响最显著,剪切力由大到小为次外环、外环、中环1、次内环、内环和中环2,剪切力变化范围为2 757.205 g~5 516.548 g。次外环硬度与剪切力值最大,设计碗形海蜇皮切刀应重点考虑该处的切割特性。

Abstract:TPA and shear tests were carried out using a bowl-shaped jellyfish as a research object.The effects of different sampling radius on hardness,elasticity and shear force were analyzed.The results showed that the influence of hardness of the sampling radius on the secondary outer ring and the outer ring was the most significant,and the hardness was from large to small,the secondary outer ring,the secondary inner ring,the inner ring,the middle ring1,the middle ring2,the outer ring,and the hardness was of the range of 10 137.896 g-15 883.456 g.The radius of the sampling had the most significant effect on the elasticity of the inner ring and the outer ring.The elasticity was from large to small,the inner ring,the middle ring2,the middle ring1,the secondary inner ring,the secondary outer ring ,the outer ring,and the elasticity was of the range of 0.57-0.81.The radius of the sampling was the most significant effect on the shearing force in the secondary outer ring and the middle ring2.The shear force was from large to small,the secondary outer ring,the middle ring1,the secondary inner ring,the inner ring,the middle ring2,and the shear force was of the range of 2 757.205 g-5 516.548 g.The secondary outer ring hardness and shear force of the largest,the design bowl-shaped jellyfish knife should focus on the cutting characteristics of the place.
