中文摘要: 从梨渣中提取不溶性膳食纤维再进行超临界二氧化碳(Supercritical CO2,ScCO2)处理,通过正交法优化处理条 件,结果表明:当超临界二氧化碳处理时间 60 min、温度 40 ℃、压力 35 MPa 时,梨渣不溶性膳食纤维吸水指数最高。比 较 ScCO2 处理前后膳食纤维物化功能特性,结果表明:ScCO2 处理后的梨渣不溶性膳食纤维持油性没有变化,膨胀性和 吸水指数均有所提高,但没有达到统计学显著性;当葡萄糖溶液浓度为 100 mmol/L 时,IDF 的葡萄糖吸附能力显著增强(P<0.05);ScCO2 处理后 IDF 的葡萄糖透析延迟指数显著增加(P<0.05)。
Abstract:The effect of supercritical CO2(ScCO2)on pear pomace insoluble dietary fiber physicochemical prop- erties had been investigated in order to provide theoretical basis and technical support for pear pomace with bet- ter application in food industry. Utilizing pear pomace as material, insoluble dietary fiber (IDF) were extracted and were treated by ScCO2 subsequently. According to orthogonal experiment, the ScCO2 technical parameter was as follows: 60 min, 40 ℃, 35 MPa. The physicochemical properties of pear pomace insoluble dietary fiber were investigated. The results indicated that the oil holding capacity did not change, swelling capacity, water absorption index were higher than before ScCO2 treatment, but did not reach statistical significance. The glucose adsorption capacity of IDF was significantly higher than before ScCO2 treated when the glucose concentration was 100 mmol/L (P<0.05). The glucose dialysis retardation index of IDF were significantly higher than before ScCO2 treated too(P<0.05).
