安顺地区3种刺梨营养品质的比较

中文摘要: 为对安顺刺梨综合开发利用提供指导,以安顺金刺梨、科技刺梨和野生刺梨为材料,采用常规分析法对 3 种刺 梨的外观品质、常规营养成分及挥发油成分进行分析。试验结果表明:金刺梨与科技刺梨和野生刺梨在外观上存在较大 差异;水分含量:科技刺梨>野生刺梨>金刺梨;组纤维含量:野生刺梨>金刺梨>科技刺梨;总酸、总糖、VC 和 β-胡萝卜素含量均为:金刺梨>野生刺梨>科技刺梨;单宁含量:野生刺梨>科技刺梨>金刺梨;科技刺梨 K 元素含量最高,金刺梨 Ca、 Mg、Mn 元素含量最高,野生刺梨 Fe、Zn、Cu 元素含量最高;金刺梨、科技刺梨和野生刺梨挥发油分别由 29 种、28 种和14 种物质组成,3 种刺梨挥发油组成物质种类、含量和比例存在显著差异。

Abstract:The appearance quality,nutritive components and volatile oil composition of three kinds of Rosa rox- burghii Tratt in Anshun City were determined and analyzed by conventional means to provide a reference for de- velopment and utilization of Rosa roxburghii Tratt in Anshun City. The experimental results showed that: there was a big difference between the physical properties of three kinds of Rosa roxburghii Tratt; the moisture content was as follows: sample 2>sample 3>sample 1; the fiber content was as follows: sample 3>sample 1>sample 2; the content of total acid, total sugar,VC and β-carotene was as follows: sample 1>sample 3>sample 2; the tan- nin content was as follows: sample 3>sample 2>sample 1; the volatile oil components was as follows:simple 1>>sample 2>sample 3;sample 2 had the highest K content,sample 1 had the highest Ca,Mg,Mn content,sam- ple 3 had the highest Fe,Zn,Cu content. The volatile oil of sample 1, sample 2 and sample 3 were composed of 29, 28 and 14 species, the composition of species, content and proportion of volatile oil of three kinds of Rosa roxburghii Tratt were significant differences.
