中文摘要: 水稻作为我国产量最大的主粮作物,其收获产物稻谷的储藏品质与营养价值的保持日益受到重视。研究表明,适宜的储藏温度能够有效抑制稻谷的呼吸代谢等生理活动,减少干物质损耗,从而延缓品质劣化,最大化地保留其营养与经济价值。该文系统总结近年来不同储藏温度(常温、低温或高温)对稻谷品质的影响,重点分析温度对维持蛋白质结构稳定性、抑制脂肪氧化酸败及延缓淀粉糊化劣变等关键指标的作用机制。基于组学研究进展,深入探讨储藏温度对稻谷代谢网络的重编程效应,旨在为稻谷科学储藏提供温度调控的理论依据,并推动精准控温技术在粮食仓储领域的应用。
Abstract:Rice is the largest staple food crop in China,and increasing attention is paid to maintaining its storage quality and nutritional value. Research showed that the appropriate storage temperature could effectively inhibit the physiological activities of rice,such as respiration and metabolism,to reduce dry matter loss and delay quality deterioration,thereby maximizing the retention of its nutritional and economic value. This paper systematically synthesized recent research on the effect of varying storage temperatures (e.g.,ambient,low,or high temperatures) on rice quality,specifically elucidating the mechanisms of temperature on protein structural stability maintenance,lipid oxidative rancidity inhibition,delayed starch gelatinization deterioration,and other key indicators. Based on advances in omics research,the reprogramming effect of storage temperature on rice metabolic network was explored in-depth,aiming to provide a theoretical foundation for temperature regulation in scientific rice storage and promote the application of precise temperature control technologies in grain preservation.
