葛根山楂复合饮料研制及体外抗氧化、降血脂作用

中文摘要: 以葛根、山楂为主要原料研制葛根山楂复合饮料,并评价复合饮料品质、抗氧化活性和降血脂功效。以模糊数学综合评分为评价指标,通过单因素试验结合正交设计法得到复合饮料最佳配方;测定最佳条件下复合饮料的抗氧化活性;利用结合牛磺胆酸盐能力和抑制胰脂肪酶活力试验测定复合饮料的降血脂效果。结果表明,葛根山楂复合饮料最佳配方为葛根汁与山楂汁体积比1∶4、三氯蔗糖添加量0.04%、柠檬酸添加量0.2%,该条件下模糊数学综合评分高达85.6,该饮料对DPPH 自由基和ABTS+自由基的清除率分别达到94.23% 和98.22%,总抗氧化能力为12.30,同时测得牛磺胆酸钠结合率和胰脂肪酶抑制率分别为25.62%和71.13%。最优配方制备所得葛根山楂复合饮料色泽澄澈透亮,葛根与山楂滋味协调浓郁,酸甜适宜,具有较好的抗氧化活性和降血脂功效。

Abstract:A Puerariae Lobatae Radix-hawthorn compound beverage was prepared with Puerariae Lobatae Radix and hawthorn as the main raw materials. The quality,antioxidant capacity,and lipid-lowering effect of this compound beverage were evaluated. Using fuzzy mathematical comprehensive scoring as the evaluation index,single factor experiments and orthogonal experiment design were employed to optimize the formula of this compound beverage. The antioxidant capacity of the compound beverage prepared with the optimal formula was determined. The lipid-lowering effect of the compound beverage was evaluated based on the taurocholate-binding capacity and inhibitory effect on pancrelipase. The optimal formula of the compound beverage was determined as follows:the volume ratio of Puerariae Lobatae Radix juice to hawthorn juice being 1∶4,sucralose addition of 0.04%,and citric acid addition of 0.2%. The compound beverage prepared with this formula exhibited a fuzzy mathematical comprehensive scoring of 85.6,the DPPH free radical and ABTS+ free radical scavenging rates of 94.23% and 98.22%,respectively,and the total antioxidant capacity of 12.30. The taurocholate-binding rate and the pancrelipase inhibition rate of the beverage were measured to be 25.62% and 71.13%,respectively.The Puerariae Lobatae Radix-hawthorn compound beverage prepared with the optimal formula was clear and bright and had a coordinated and rich taste,balanced sweetness and sourness,and favorable antioxidant capacity and lipid-lowering effect.
