中文摘要: 利用植物乳杆菌HNU082(HNU082)发酵椰浆,比较发酵椰浆(fermented coconut milk,FCM)与原椰浆(raw coconut milk,RCM)的理化性质和抗氧化活性差异,并通过非靶代谢分析椰浆发酵前后代谢物的变化。结果表明,HNU082 表现出良好的发酵性能,且椰浆是乳酸菌良好的发酵基底。FCM 的菌落总数达到8.74 lg(CFU/mL),pH 值、总糖和可溶性固形物含量显著降低,而乳酸含量达到5 100.13 μg/mL。此外,FCM 的DPPH 自由基清除能力显著提升。基于非靶代谢分析,发酵前后椰浆共检测出624 种差异代谢物,主要集中在有机酸及其衍生物、脂质及类脂分子等。同时,FCM 中甘草苷B、大叶茜草素、十五烷酸和没食子酸等重要差异代谢物显著富集,而拓扑分析发现差异代谢物主要与氨基酸代谢相关。
Abstract:Coconut milk was fermented by Lactiplantibacillus plantarum HNU082(HNU082). The physicochemical properties and antioxidant activity of fermented coconut milk (FCM) and raw coconut milk(RCM)were compared, and non-targeted metabolomics was employed to analyze the changes in the metabolites of coconut milk before and after fermentation. The results showed that HNU082 exhibited excellent fermentation properties and coconut milk was a suitable fermentation substrate for lactic acid bacteria. The total colony count of FCM reached 8.74 lg (CFU/mL). Compared with RCM, FCM showed significant decreases in pH, total sugar content, and soluble solids content, with the lactic acid content reaching 5 100.13 μg/mL. In addition, the DPPH free radical scavenging activity of FCM was significantly increased. The non-targeted metabolomics analysis revealed a total of 624 differential metabolites in coconut milk before and after fermentation, and the differential metabolites mainly included organic acids and derivatives, lipids, and lipid-like molecules.Meanwhile, important differential metabolites such as licoagroside B, mollugin, pentadecanoic acid, and gallic acid were markedly enriched in FCM. Topological analysis revealed that the differential metabolites were mainly associated with amino acid metabolism.
