中文摘要: 利用鱼鳞制备胶原蛋白抗氧化肽,既可以保护环境,又可显著提高水产副产物加工附加值。该文首先综述鱼鳞抗氧化肽的提取纯化方法,重点讨论不同提取和纯化方法对鱼鳞抗氧化肽得率和功能特性的影响,并对各种提纯方法优缺点进行总结分析。其次,深入探讨不同质谱法鉴定鱼鳞抗氧化肽的工作原理、性能优势及适用情形。最后权衡分析方法在反映抗氧化肽活性方面的利弊,并提出目前还存在的问题和未来研究方向的展望,以期为推动水产副产物加工产业可持续发展提供一定参考。
Abstract:The preparation of antioxidant peptides from fish scale collagens not only protects the environment but also significantly improves the added value of aquatic by-product processing. First,the extraction and purification methods of fish scales′ antioxidant peptides were reviewed in this paper. The effects of different extraction and purification methods on the extraction yield and functional characteristics of fish scales′ antioxidant peptides were discussed,and the advantages and disadvantages of various extraction and purification methods were summarized. Secondly,the working principles,performance advantages,and applicable scenarios of different mass spectrometry methods for the identification of fish scales′ antioxidant peptides were explored in depth. Finally,the advantages and disadvantages of analysis methods in reflecting the activity of antioxidant peptides were weighed. Existing problems and future research directions were proposed to provide a reference for promoting the sustainable development of the aquatic by-product processing industry.
