中文摘要: 亚临界水是一种绿色环保高效的萃取技术,对于高效分离提取米糠营养组分具有较大潜力。以米糠为原料,利用亚临界水技术处理,考察不同处理条件对米糠营养成分的影响。结果表明,提取温度对水溶性固形物得率影响极显著,在提取温度180 ℃、提取时间5 min、体系pH7时,水溶性固形物得率达到最大值(66.33%)。提取温度对米糠蛋白质、淀粉、半纤维素、阿魏酸提取率和木质素保留率影响显著,随提取温度升高,蛋白质、淀粉、半纤维素、阿魏酸提取率和木质素保留率均升高;提取时间对米糠营养成分提取率无显著影响;提取pH值对脂肪提取率影响显著;提取温度对固相中米糠毛油活性成分影响显著,随提取温度升高,谷维素、角鲨烯、植物甾醇保留率显著降低。
Abstract:Subcritical water is a green,environmentally friendly and highly efficient extraction technology with great potential for the efficient separation and extraction of nutritional components from rice bran. In this study,rice bran was used as the raw material and treated with subcritical water technology. The effects of different treatment conditions on the nutritional components of rice bran were investigated. The results showed that the extraction temperature had the most significant impact on the yield of water-soluble solids. At an extraction temperature of 180 ℃,an extraction time of 5 min,and a system pH of 7,the yield of water-soluble solids reached the maximum value of 66.33%. The extraction temperature had a significant effect on the extraction rates of protein,starch,hemicellulose and ferulic acid,as well as the lignin retention rate in rice bran. With the increase in extraction temperature,the extraction rates of protein,starch,hemicellulose,ferulic acid,as well as the lignin retention rate,all increased. The extraction time showed no significant effect on the extraction rates of the nutritional components from rice bran. The extraction pH had a significant effect on the fat extraction rate. The extraction temperature had a significant effect on the active substances in the crude oil of rice bran in the solid phase. With the increase in extraction temperature,the retention rates of oryzanol,squalene,and phytosterols significantly decreased.
