中文摘要: 为分析新疆不同产区恰玛古的基础营养成分和功能性成分的差异,明确恰玛古的品质特征,通过测定恰玛古水分、蛋白质、粗纤维、矿物质元素、氨基酸含量等基础性指标和粗多糖、总黄酮、皂苷含量等功能性指标,同时选取具有代表性的差异指标进行判别分析,进而表征不同产区恰玛古的营养品质差异及其品质特征。研究结果表明,阿克苏产区恰玛古中蛋白质含量(2.12 g/100 g)、粗纤维含量(1.11%)、可溶性固形物含量(12.51%)、蔗糖含量(3.87 g/100 g)、总糖含量(7.37 g/100 g)、可滴定酸含量(0.19 g/100 g)、维生素C含量(64.80 mg/100 g)、总矿物质元素含量(7 729.10 mg/kg)、总氨基酸含量(1 509.50 mg/100 g)在所有产区中均为最高值,且与其他3 个产区具有显著性差异(P<0.05)。基于矿物质元素和氨基酸的品质特性分析表明,钠、铁、钙、磷元素为区分不同恰玛古产区的特征矿物质元素;胱氨酸、谷氨酸、蛋氨酸、苯丙氨酸和脯氨酸为区分不同恰玛古产区的特征氨基酸。
Abstract:To analyze the differences in basic nutritional components and functional constituents of qamgur(Brassica rapa L.) from different production regions in Xinjiang and to clarify its quality characteristics,this paper determined fundamental indicators (e.g.,moisture,protein,crude fiber,mineral elements,amino acids)and functional indicators (e.g.,crude polysaccharides,total flavonoids,saponins). Representative differential indicators were then selected for discriminant analysis to characterize the nutritional quality differences and quality characteristics of qamgur from different production regions. The results showed that qamgur from the Aksu production region had the highest values among all production regions for protein content (2.12 g/100 g),crude fiber content (1.11%),soluble solids content (12.51%),sucrose content (3.87 g/100 g),total sugar content (7.37 g/100 g),titratable acid content (0.19 g/100 g),vitamin C content (64.80 mg/100 g),total mineral element content (7 729.10 mg/kg),and total amino acid content (1 509.50 mg/100 g),with significant differences compared to the other three production regions (P<0.05). Analysis of quality characteristics based on mineral elements and amino acids indicated that sodium,iron,calcium,and phosphorus were the characteristic mineral elements for distinguishing qamgur from different production regions;cystine,glutamic acid,methionine,phenylalanine,and proline were the characteristic amino acids for distinguishing qamgur from different production regions.
