中文摘要: 该文以唐棣果实为研究对象,分析其常规营养成分、氨基酸、生物活性成分的含量。结果表明:唐棣果实中水分、灰分和脂肪含量分别为77.66%、2.66% 和0.94%;蛋白质含量为0.57 mg/g;还原糖含量为94.80 mg/g;18 种氨基酸总量为21.15 mg/g,其中非必需氨基酸含量为15.00 mg/g;维生素C 含量为0.21 mg/g;维生素B1、维生素B3、维生素B6 含量分别为0.02、0.03 mg/g 和0.04 mg/g;总黄酮、总多酚、多糖和花青素含量分别为11.77、5.21、198.60 mg/g 和0.71 mg/g。唐棣果实具有丰富的营养成分,并具有黄酮、多酚、花青素等生物活性成分,有较高的开发利用价值。

Abstract:In this study,the fruit of Amelanchier sinica (C. K. Schneid.) Chun was taken as the research subject to explore the content of routine nutritional composition,amino acids,and bioactive components. According to the results,moisture,ash,and fat content in the fruit were 77.66%,2.66%,and 0.94%,respectively. Protein content was 0.57 mg/g,and reducing sugar content was 94.80 mg/g. The content of 18 amino acids was 21.15 mg/g,and the content of non-essential amino acids was 15.00 mg/g. Vitamin C content was 0.21 mg/g.VB1,VB3,and VB6 content were 0.02,0.03,0.04 mg/g,respectively. The total flavonoid,total polyphenol,polysaccharide,and anthocyanin content were 11.77,5.21,198.60,0.71 mg/g,respectively. In conclusion,the fruit of A. sinica was rich in nutrients and had active ingredients such as flavonoids,polyphenols,and anthocyanins.Therefore,with high development and utilization value.
