中文摘要: 微生物来源胞外多糖是一类由多种细菌、微藻和真菌分泌的高分子量碳水化合物,具有结构多样和易于制备等特点。岩藻糖、岩藻多糖和岩藻寡糖具有抗肿瘤、免疫调节、抗凝血和清除幽门螺旋杆菌等功能,在食品和医药领域有重要应用,然而,来源途径限制了此类有益成分的广泛应用。微生物来源的岩藻糖基化胞外多糖(fucosylated exopolysaccharide,FuEPS)是岩藻糖、岩藻多糖和岩藻寡糖的新资源。该文综述岩藻糖、岩藻多糖和岩藻寡糖的研究进展,总结能够产生FuEPS 的细菌、微藻和真菌种类以及FuEPS 的活性功能,为FuEPS 在功能性食品和医药行业的深度开发提供依据。
Abstract:Microbial exopolysaccharides are a type of high-molecular-weight carbohydrates secreted by various bacteria, microalgae, and fungi and have the characteristics of diverse structures and easy preparation. Fucose, fucoidan, and fucoidan oligosaccharides exhibit biological functions such as anticancer, immune regulation, anticoagulation, and clearance of Helicobacter pylori and have important applications in the fields of food and medicine. However, the sources limit the wide application of such beneficial ingredients. Microbial fucosylated exopolysaccharides (FuEPSs) are new resources for the preparation of fucose, fucoidan, and fucoidan oligosaccharides. The research progress on fucose, fucoidan, and fucoidan oligosaccharides was reviewed in this paper, and the types of bacteria, microalgae, and fungi that can produce FuEPSs as well as the biological functions of FuEPSs were summarized. This review provides a basis for further in-depth development of FuEPSs in the functional food and pharmaceutical industries.
