中文摘要: 胶原蛋白具有优异的生物相容性、生物降解性和微弱的抗原性,已应用于食品、医药、化妆品等领域。然而由于宗教信仰、过敏反应和疾病传播等原因,使得陆生源胶原蛋白在应用上受到限制。我国沿海地区水母资源丰富,食用水母总胶原蛋白干物质含量为122.64~693.92 mg/g,约占其总蛋白质含量的一半,可以作为良好的海洋胶原蛋白来源。该文系统综述水母胶原的提取方法及其机制和水母胶原蛋白及其水解物的生物活性,总结水母胶原蛋白在食品、医药材料以及化妆品领域的应用与研究进展,并对其提取和利用进行展望,旨在为水母胶原蛋白的进一步开发利用提供更多的思路。
Abstract:Collagen with excellent biocompatibility, biodegradability, and weak antigenicity, has been used in food, medicine, cosmetics, and other fields. However, the application of terrestrial collagen is limited due to the emergence of problems such as religious beliefs, allergic reactions, and disease transmission. Jellyfish resources are abundant in coastal areas of China, and the total collagen dry matter content of edible jellyfish ranges from 122.64 to 693.92 mg/g, accounting for about half of its total protein content, which can be used as a good source of marine collagen. The extraction methods and mechanisms of jellyfish collagen were systematically reviewed, as well as the biological activities of jellyfish collagen and its hydrolysate. Additionally, the application and research progress of jellyfish collagen in the fields of food, pharmaceutical materials, and cosmetics were summarized, and the extraction and utilization of jellyfish collagen were prospected, aiming to provide more ideas for the further development and utilization of jellyfish collagen.
