中文摘要: 该研究旨在探讨不同处理方式对玉米须多酚提取量及其抑菌活性的影响。通过采用低温、湿热和高温3 种常见的加工方法,评估加工处理对玉米须多酚提取量的影响,并进一步研究加工后样品在抑菌方面的变化。利用大肠杆菌、金黄色葡萄球菌、枯草芽孢杆菌、黄曲霉、青霉、黑根霉6 种菌株评估玉米须多酚的抑菌效果。结果显示,玉米须多酚对6 种供试菌株均具有良好的抑菌效果。低温下玉米须多酚对金黄色葡萄球菌抑菌效果最佳,达到(8.95±0.16) mm;高温下玉米须多酚对黑根霉抑菌效果较差,仅为(6.28±0.51) mm。低温下玉米须多酚的抑菌效果较好;高温下玉米须多酚的抑菌效果较差。综上所述,玉米须多酚对细菌、霉菌具有一定的抑制作用,是一种潜在的天然抑菌性抗氧化剂。
Abstract:The extraction of polyphenols from corn silk processed with three different methods and the antimicrobial activities of the extracted polyphenols were studied. The effects of three common processing methods(low temperature, wet heating, and high temperature) on the yields and antimicrobial activities of polyphenols from corn silk were evaluated. The antimicrobial activities of polyphenols extracted from corn silk were evaluated with six microbial species: Escherichia coli, Staphylococcus aureus, Bacillus subtilis, Aspergillus flavus, Penicillium, and Rhizopus nigricans. The results showed that the extracted polyphenols had good inhibitory effects on the six microbial species. The polyphenols extracted from corn silk processed at low temperature showed the strongest inhibitory effect on S. aureus, with the inhibition zone diameter reaching (8.95±0.16) mm.The polyphenols extracted from corn silk processed at high temperature demonstrated the poorest inhibitory effect on R. nigricans, with the inhibition zone diameter of only (6.28±0.51) mm. The polyphenols extracted from corn silk processed at low temperature had strong antimicrobial activities, while those at high temperature had weak antimicrobial activities. In summary, corn silk polyphenols with inhibitory effects on bacteria and molds serve as a potential natural antimicrobial antioxidant.
