中文摘要: 酵母β-葡聚糖是一种从酵母菌中提取的多糖类物质,具有β-1,3-葡聚糖主链,已被批准为新食品原料,广泛应用于食品、生物等行业。体内外实验和人群临床实验揭示酵母β-葡聚糖是一种免疫调节剂并具有益生元效益。该文对酵母β-葡聚糖的免疫调节、改善肠道健康、调节糖脂代谢、抗氧化等功能活性及其在食品工业中的应用进行综述,以期为酵母β-葡聚糖健康产品的创制提供理论参考。

Abstract:Yeast β-glucan is the polysaccharide extracted from yeast, with β-1,3-glucan as the backbone. It has been approved as a new food ingredient and it is widely applied in the food and biological industries. In vitro and in vivo experiments, as well as clinical trials, have demonstrated yeast β-glucan to be an immunomodulator and prebiotic. Therefore, the biological activities of yeast β-glucan, including immunomodulation, intestinal health improvement, glycolipid metabolism regulation, and antioxidant properties, were summarized. In addition, the application of yeast β-glucan in the food industry was reviewed, with the aim of providing theoretical references for the development of health products with yeast β-glucan.
