中文摘要: 奶啤是一种兼具酸乳、啤酒和碳酸饮料风味口感的新型发酵乳饮料。该文从原辅料、发酵剂菌种、发酵过程、工艺流程和质量控制、产品开发等方面综述奶啤生产技术的研究进展,并针对市售奶啤质量状况和存在问题,提出制定奶啤饮料行业标准的紧迫性和必要性。
Abstract:Milk beer is a new type of fermented milk beverages that combines the flavors of yogurt,beer,and carbonated drinks. The research progress in the production technology of milk beer was reviewed from the aspects of raw materials,starters,fermentation process,process flow,quality control,and product development.In view of the quality and existing problems of commercially available milk beer products,it is urgent to formulate the industry standard for milk beer beverages.
