中文摘要: 多糖的可食用包装材料因其出色的可降解性而受到广泛关注。该文开发一种负载百里香精油Pickering 乳液(thyme essential oil Pickering emulsion,OPE)的魔芋胶(konjac gum,KGM)基双层活性膜。该双层活性膜在明显提高KGM 单层活性膜机械性能的同时,成功实现百里香精油的单向释放,延长精油的保留时间。此外,通过测定双层活性膜的理化性质和抗菌活性,发现双层活性膜具有良好的抗氧化、抗菌以及生物降解特性。将双层活性膜应用于三文鱼保鲜,与商用保鲜膜相比,双层活性膜成功延缓三文鱼在贮藏过程中的总挥发性盐基氮(total volatile base nitrogen,TVB-N)值和pH 值的增加,证明双层活性膜在食品保鲜中应用的潜力。
Abstract:Edible packaging materials based on polysaccharides have gained widespread attention due to their excellent degradability. This paper developed a bilayer active film based on konjac gum (KGM) loaded with thyme essential oil Pickering emulsion(OPE). The bilayer active film significantly improved the mechanical properties of KGM single-layer active films and also successfully achieved unidirectional release of thyme essential oil, thereby prolonging its retention time of the essential oil. Furthermore, the physicochemical properties and antibacterial activity of the bilayer active film were measured, revealing its excellent antioxidant, antibacterial, and biodegradation properties. When applied to salmon preservation, the bilayer active film was found to successfully delay the increase in total volatile base nitrogen(TVB-N) and pH values of the salmon during storage compared to commercial cling film. These findings highlighted the potential application of bilayer active films in food preservation.
