中文摘要: 以金银花原料为主,辅以其他药食同源类物质(菊花、麦芽、陈皮、茯苓、薄荷、葛根),设计一款金银花解酒护肝复方功能性食品。采用提取、浓缩、喷雾干燥技术分别制作金银花单方粉和金银花复方粉,并从物理特性及功效方面进行研究。在物理特性方面,与单方粉相比,金银花解酒护肝复方粉流动性好,水溶性指数大、溶解性好;在抗氧化活性方面,金银花复方粉DPPH 自由基清除率达到70.40%,羟基自由基清除率达到96.25%,均优于金银花单方粉;在斑马鱼酒精性肝损伤模型中,金银花复方粉增加肝脏荧光面积及荧光强度更明显,具有更好的酒精性肝损伤保护作用。
Abstract:A honeysuckle-based compound functional food for relieving alcohol intoxication and protecting the liver was designed,supplemented with other medicinal and edible homologous substances such as chrysanthemum,malt,tangerine peel,poria cocos,mint,and pueraria. Using extraction,concentration,and spray-drying techniques,both honeysuckle single powder and honeysuckle compound powder were prepared,and their physical properties and effects were studied. In terms of physical properties,compared to the single powder,the honeysuckle compound powder for relieving alcohol intoxication and protecting the liver exhibited better flowability,a higher water solubility index,and better solubility. Regarding antioxidant activity,the DPPH radical scavenging capacity of honeysuckle compound powder reached 70.40%,and the hydroxyl radical scavenging capacity reached 96.25%,both of which were superior to those of the honeysuckle single powder. In a zebrafish model of alcoholic liver injury,the honeysuckle compound powder more significantly increased the fluorescence area and intensity of the liver,demonstrating a better protective effect against alcoholic liver injury.
