中文摘要: 为建立畜禽肉中动物源性成分快速有效的鉴别方法,对鸡肉、鸭肉、鹅肉、猪肉、牛肉、羊肉6 种动物肉样绝干基础样品中16 种氨基酸含量进行测定,建立各种动物样品的氨基酸简洁模式,并通过主成分分析和判别分析对不同样品16 种氨基酸含量进行综合评价和分类。结果表明,6 种动物样品均具有独特的氨基酸模式。通过主成分分析将16 个氨基酸指标简化为3 个主成分,其累积方差贡献率为90.575%。判别分析显示鸡肉、鸭肉、鹅肉、猪肉、牛肉、羊肉6 种动物样品分别集中在不同的区域,彼此之间差异明显,很容易辨别。基于氨基酸模式和判别分析均可进行畜禽肉源性成分鉴别。
Abstract:To establish a rapid and effective method for identifying animal-derived components in livestock and poultry meat,16 kinds of amino acid contents were determined in six absolute dried basis samples of animal meat,namely,chicken,duck,goose,pork,beef,and mutton.The simplified amino acid pattern of various meat samples was established,with the 16 amino acid contents in different animal samples comprehensively evaluated and classified by principal component analysis and discriminant analysis.It was found that all six kinds of animal samples had their own unique amino acid pattern.The 16 amino acid indexes were simplified into three principal components by principal component analysis,with a cumulative variance contribution rate of 90.575%.Discriminant analysis showed that the six animal samples of chicken,duck,goose,pork,beef,and mutton were concentrated in different regions,which differed significantly from each other and were easily distinguished.Both the amino acid pattern and discriminant analysis can be used to identify animal-derived components of livestock and poultry.
