不同产地沃柑品质差异分析

中文摘要: 以4 个产地(武鸣、全州、贵港、靖西)不同采收期的沃柑为研究对象,分析其色泽、理化特性及营养成分变化。结果表明:沃柑品质因产地和采收期不同而呈现出差异,随着采收期延长,4 个产地的沃柑L*值、b*值、可滴定酸、总酚及柠檬苦素含量均呈降低趋势,a*值、可溶性固形物含量、固酸比、维生素C 含量及类胡萝卜素含量不断升高,氨基酸含量呈现动态变化趋势。聚类分析显示武鸣、全州、贵港、靖西采收期Ⅰ的沃柑归为一类,全州、贵港采收期Ⅱ、Ⅲ和武鸣、靖西采收期Ⅱ的沃柑归为一类,武鸣、靖西采收期Ⅲ的沃柑归为一类。研究结果表明,采收期Ⅰ、Ⅱ的武鸣、全州、贵港、靖西沃柑品质无差异,采收期Ⅲ的武鸣、靖西沃柑品质优于全州、贵港沃柑,采收期Ⅲ的武鸣、靖西沃柑果实色泽诱人、酸甜可口无苦涩味、营养丰富,较适合鲜食和加工。

Abstract:The color,physicochemical properties,and nutritional components of orah mandarins from four producing areas(Wuming,Quanzhou,Guigang,and Jingxi)at different harvesting periods were analyzed.The results showed that the quality of orah mandarins varied depending on the producing area and harvesting period.With the extension of the harvesting period,the L*value,b*value,titrable acid,total phenol,and limonin contents of orah mandarins from four producing areas all showed a decreasing trend,while the a*value,soluble solids,solid-acid ratio,vitamin C,and carotenoid contents increased continuously,and the amino acid content showed a dynamic change trend.Cluster analysis showed that the orah mandarins at the harvesting period Ⅰfrom Wuming,Quanzhou,Guigang,and Jingxi were clustered into one group,and the orah mandarins at the harvesting periods II and Ⅲfrom Quanzhou and Guigang and those at the harvesting period II from Wuming and Jingxi belonged to one group.Moreover,the orah mandarins at the harvesting period Ⅲfrom Wuming and Jingxi fell into one group.The results of this study indicated that there was no difference in the quality of orah mandarins from Wuming,Quanzhou,Guigang,and Jingxi at harvesting periods Ⅰand Ⅱ.In addition,the quality of orah mandarins from Wuming and Jingxi at the harvesting period Ⅲwas better than that from Quanzhou and Guigang.The orah mandarins from Wuming and Jingxi at the harvest period Ⅲhad attractive color,moderate sweetness and sourness,and rich nutrition,with no bitterness,so they were more suitable for fresh eating and processing.
