Abstract:The main technologies in the research of proteomics were introduced and the application of proteomics in quick-frozen food was reviewed.The problems and limitations of proteomics research in the processing of quick-frozen food were discussed,and the development trend in the future was prospected.The review provides a theoretical reference for further research on the application of proteomics in the processing of quickfrozen food.
