中文摘要: 采用蒸馏水、0.2%壳聚糖溶液和0.2%壳聚糖-2%茶多酚混合液浸泡秀珍菇,晾干后于4℃贮藏9 d,研究不同处理组秀珍菇贮藏过程中失重率、褐变度、呼吸速率、相对电导率、丙二醛含量、超氧阴离子自由基生成速率和过氧化氢含量的变化规律。结果显示,贮藏9 d后,壳聚糖-茶多酚处理组失重率(2.26%)、呼吸速率[83.67 mg/(kg·h)]、相对电导率(33.77%)和丙二醛含量(0.87 μmol/g)最低(P<0.05),并且壳聚糖-茶多酚处理对秀珍菇褐变程度和超氧阴离子自由基生成速率也有较好的抑制效果。说明壳聚糖-茶多酚处理可有效保持低温冷藏条件下秀珍菇的品质。
Abstract:Pleurotus geesteranus specimens were soaked with distilled water,0.2%chitosan solution,and a 0.2%chitosan-2%tea polyphenol mixture,and then stored at 4 °C for nine days.The effects of the three treatments on the weight loss rate,degree of browning,respiration rate,relative electrical conductivity,malondialdehyde content,superoxide anion radical production activity,and hydrogen peroxide content of Pleurotus geesteranus during storage were studied.The results showed that after 9 days of storage,the weight loss rate (2.26%),respiratory rate[83.67 mg/(kg·h)],relative conductivity(33.77%),and malondialdehyde content(0.87 μmol/g)were the lowest in the chitosan-tea polyphenol treatment group.Further,the chitosan-tea polyphenol treatment notably suppressed the degree of browning and superoxide anion radical production activity of Pleurotus geesteranus during storage.Thus,the findings showed that chitosan-tea polyphenol treatment effectively maintained the integrity of Pleurotus geesteranus samples during low-temperature storage.
