中文摘要: 黄瓜皮中富含类胡萝卜素和叶绿素,可作为天然食品着色剂和生物活性成分食用。采用单因素和正交试验考察纤维素酶添加量、料液比、乙醇体积分数以及超声时间对黄瓜皮中色素提取量的影响。通过正交试验分析得到:纤维素酶添加量对黄瓜皮色素提取量的影响最重要,乙醇体积分数次之,其次为料液比,最后为超声时间,最优工艺条件为纤维素酶添加量0.8%、料液比1∶90(g/mL)、乙醇体积分数90%、超声时间90 min,在此条件下从黄瓜皮中提取得到的3种色素含量最大,分别为137.83、69.52、76.54 mg/g。
Abstract:Cucumber peels are rich in carotenoids and chlorophyll,which can be used as natural food colorants and bioactive ingredients.The effects of cellulase addition amount,solid-liquid ratio,ethanol volume fraction and ultrasonic time on the extraction yield of pigment from cucumber peels were investigated by single factor and orthogonal tests.The orthogonal test showed that cellulase addition amount was the most important factor affecting the extraction rate of pigment from cucumber peels,followed by ethanol volume fraction,solid-liquid ratio and ultrasonic time.The optimal process conditions were cellulase addition amount of 0.8%,solid-liquid ratio of 1 ∶90(g/mL),ethanol volume fraction of 90% and ultrasonic time of 90 min.Under the above conditions,the pigment content of cucumber peels was 137.83 mg/g,69.52 mg/g and 76.54 mg/g,respectively.The results revealed that ultrasonic-assisted enzymatic extraction was an efficient method for extracting pigment.
