中文摘要: 黄素单加氧酶是一种重要的氧化还原酶,能够催化多种化合物的羟基化、拜尔-维利格氧化、硫氧化、环氧化和卤化反应等,被广泛应用于食品、医药和化工等领域。该文从分类、特性研究(包括表达条件优化和催化反应过程控制)、蛋白质工程及其在食品功能因子合成中的应用等方面对黄素单加氧酶进行综述,并对其发展前景进行展望。
Abstract:As an oxidoreductase,flavoprotein monooxygenase can catalyze the hydroxylation,Baeyer-Villiger oxidation,sulphoxidation,epoxidation,and halogenating reaction of various compounds.There are widely used in food,medicine and chemical industry.In this study,flavoprotein monooxygenases were reviewed in terms of the classification,biochemical characterization(including the expression condition optimization and the process control of catalytic reaction),protein engineering and application in the synthesis of functional food factors,respectively.In addition,the future development was also analyzed.
