中文摘要: 分析贵州晚熟李资源的果实氨基酸含量及组成差异,评价其营养品质。使用氨基酸自动分析仪检测贵州晚熟李氨基酸种类与含量,运用必需氨基酸比值、味觉强度值、氨基酸比值系数、氨基酸比值系数分及主成分分析等方法进行营养评价。除蛋氨酸外,贵州晚熟李果实中含有17种氨基酸;氨基酸总量为0.321 g/100 g~0.842 g/100 g;必需氨基酸含量为0.085 g/100 g~0.206 g/100 g;儿童必需氨基酸含量为0.015 g/100 g~0.041 g/100 g;药用氨基酸含量为0.163 g/100 g~0.467 g/100 g;鲜味氨基酸含量为0.125 g/100 g~0.377 g/100 g。必需氨基酸/氨基酸总量与必需氨基酸/非必需氨基酸均以迟李子最高,分别为30.71%和44.31%。谷氨酸贡献鲜美口味,脯氨酸贡献舒适甜味,胱氨酸贡献香味,其它氨基酸对味觉贡献不大。氨基酸比值系数分在59.81~83.23,以晚青脆最高;主成分综合评价得出晚青脆营养价值最佳。贵州晚熟李氨基酸种类齐全,含量较高,种质间差异明显,表现出丰富的多样性。其中,以晚青脆的药用氨基酸、鲜味氨基酸、芳香族氨基酸含量最高,必需氨基酸模式更符合人体需求,综合营养价值最佳。
Abstract:The amino acid content and composition late mature plums grown in Guizhou were analyzed to evaluate the nutritional quality of the fruits.Amino acid types and content were analyzed using automatic amino acid analyzer,and nutritional evaluation was carried out by evaluating the essential amino acid ratio,taste activity value,and ratio coefficient of amino acids and by performing principal component analysis.In addition to methionine,17 types of amino acids were found in plums.The total amino acid content ranged from 0.321 g/100 g to 0.842 g/100 g.Essential amino acid content ranged from 0.085 g/100 g to 0.206 g/100 g.Child essential amino acids ranged from 0.015 g/100 g to 0.041 g/100 g.The medicinal amino acid content of late mature plums after processing ranged from 0.163 g/100 g to 0.467 g/100 g.The content of fresh amino acids in the plums ranged from 0.125 g/100 g to 0.377 g/100 g.The percentage of essential amino acids/total amino acids and essential amino acids/non-essential amino acids of Chilizi were the highest(30.71% and 44.31%,respectively).Glutamic acid,proline,and cystine contributed to the delicious taste,comfortable sweetness,and aroma,respectively,while the other amino acids contributed little to taste.The amino acid ratio coefficient ranged from 59.81 to 83.23,Wanqingcui was the highest.The nutritional value of Wanqingcui was the best according to a comprehensive evaluation of the principal components.Late mature plum in Guizhou had a complete variety of amino acids and high content,exhibited obvious differences between the germplasm of different plum varieties,and showed rich diversity.Among these plums,Wanqingcui exhibited the highest comprehensive nutritional value,had the highest amount of medicinal amino acids,delicious amino acids,and aromatic amino acids,and its essential amino acid content was adequate for human needs.
