中文摘要: 为优化酶法提取沙棘色素,该试验通过响应面法对酶法提取沙棘色素的工艺进行优化,并对其稳定性进行研究。结果表明:当酶解时间为121 min、酶解温度为52 ℃、液料比为11.1∶1(mL/g)、酶解pH值为5.83时,沙棘色素吸光度为1.672,试验结果与模型预测所得结果相符合。稳定性试验表明:氧化还原剂、Fe3+对沙棘色素稳定性影响较为明显,光照对沙棘色素结构具有破坏作用,Al3+对沙棘色素稳定性影响较小。

Abstract:To optimize the enzymatic extraction of Hippophae thamnoides pigments,this study employed response surface methodology to optimize the enzymatic extraction process and investigated the stability of the pigments. The results showed that with the enzymatic hydrolysis time of 121 min,the temperature of 52 ℃,the liquid-to-material ratio of 11.1∶1 (mL/g),and the pH of 5.83,the absorbance content of H. thamnoides pigments was 1.672,which was consistent with the predicted value from the model. The stability tests showed that oxidizing and reducing agents,as well as Fe3+,had significant effects on pigment stability,while light exposure caused structural damage to the pigments. In contrast,Al3+ exhibited a relatively minor impact on pigment stability.
