不同澄清方法对刺梨酵素澄清效果及其品质的影响

中文摘要: 为探究不同澄清方式对刺梨酵素澄清效果及品质的影响,以刺梨酵素透光率和品质为评价指标,分析比较自然澄清、壳聚糖、壳聚糖+刺梨发酵果渣、刺梨发酵+果渣、硅藻土、硅藻土+刺梨发酵果渣对刺梨酵素澄清效果的影响,筛选出最优澄清剂。结果表明,经7 d澄清后,自然澄清透光率为47.72%,1%壳聚糖、1%壳聚糖+刺梨发酵果渣、刺梨发酵果渣、硅藻土、硅藻土+刺梨发酵果渣组添加量分别在28.00、(14.00+15.00)、30.00、1.50、(0.75+7.50) g时,透光率分别为93.78%、93.73%、85.45%、78.39%、76.22%,总酸含量保留率均大于85%,总酚、可溶性固形物含量保留率均大于95%,维生素C保留率分别为79.13%、67.51%、86.78%、97.61%、97.61%。综上,以透光率大于80%作为第一指标,营养物质保留率大于80%作为第二指标,筛选出刺梨发酵果渣可作为刺梨酵素澄清剂的较优选择。
Abstract:The clarification performance of different clarification methods and the effects of the methods on the quality of Rosa roxburghii fruit ferment were studied. With the light transmittance and quality of R. roxburghii fruit ferment as evaluation indexes,the clarification performance of natural clarification,chitosan,chitosan+R.roxburghii pomace after fermentation,R. roxburghii pomace after fermentation,diatomite (G),and diatomite+R. roxburghii pomace after fermentation was compared,and the optimal clarifier was selected. The results showed that after 7 days of clarification,the light transmittance of natural clarification was 47.72%. The groups of chitosan (28.00 g),chitosan+R. roxburghii pomace after fermentation [(14.00+15.00) g],R. roxburghii pomace after fermentation (30.00 g),diatomite (1.50 g),diatomite+R. roxburghii pomace after fermentation [(0.75+7.50) g] showed the light transmittance of 93.78%,93.73%,85.45%,78.39%,and 76.22%,the total acid retention rates above 85%,total phenol content and soluble solid content above 95%,and vitamin C retention rates of 79.13%,67.51%,86.78%,97.61%,and 97.61%,respectively. In conclusion,with light transmittance greater than 80% as the primary index and nutrient retention rate greater than 80% as the secondary index,the R. roxburghii pomace after fermentation can be selected as the best clarifier for R. roxburghii fruit ferment.
