中文摘要: 西洋参属传统名贵中药材,富含皂苷、黄酮、多糖、氨基酸及挥发油等活性成分,具有抗疲劳、抗肿瘤、改善心血管疾病、增强机体免疫力等功能特性。2023年西洋参获批药食同源,在食品药品领域应用广泛。该文结合相关文献进行梳理,从西洋参中活性成分、在食品加工中的特点以及西洋参在现代食品中的研究与应用等方面进行综述,以期为相关研究提供参考。

Abstract:American ginseng,a precious Chinese herbal medicine,is rich in active ingredients such as saponins,flavonoids,polysaccharides,amino acids,and volatile oils.It has anti-fatigue,anti-tumor,cardiovascular disease-ameliorating,and immunity-enhancing activities. In 2023,American ginseng was approved for both medicinal and edible use and is widely used in food and medicine.The active ingredients of American ginseng and their characteristics in food processing as well as the research and application of this medicine in modern food that were reported in relevant articles were reviewed,with the aim of providing reference for related research.
