舟山3 种海水虾肌肉营养成分分析与品质评价

中文摘要: 为评价不同品种虾类肌肉营养成分及品质差异,以脊尾白虾、哈氏仿对虾和中华管鞭虾为研究对象,分析其含肉率、基础营养成分、色差、质构、脂肪酸种类及组成、氨基酸和矿物元素组成及含量等。结果显示,脊尾白虾含肉率较低,但粗脂肪含量较高,肌肉弹性、内聚性和咀嚼性较好。哈氏仿对虾粗蛋白含量较高,微量元素含量丰富,但鲜味氨基酸含量较低。中华管鞭虾水分含量高,肌肉色泽较明亮,为红黄色。3 种虾肌肉中均检出17 种氨基酸,均以谷氨酸含量最高;脂肪酸均检出26 种,其中含量最高的均为多不饱和脂肪酸,单不饱和脂肪酸含量最低。综上,3 种虾的肌肉品质各有所长,其中脊尾白虾口感好,哈氏仿对虾综合营养价值最高,而中华管鞭虾的色泽和滋味较好。
Abstract:In order to evaluate the differences in nutritional components and quality of different shrimp species, this study focused on the net muscle percentage, basic nutritional components, color, texture, fatty acid type and composition, amino acids, and mineral elements of Exopalaemon carinicauda, Parapenaeopsis hardwickii, and Solenocera crassicornis. The results showed that the net muscle percentage of E. carinicauda was relatively lower, but the crude fat content was higher, and the muscle had good springiness, cohesiveness,and chewiness. P. hardwickii had a higher crude protein content and was rich in trace elements, but the content of delicious amino acids was lower. The S. crassicornis had a high moisture content, and its muscle exhibited a bright red-yellow color. All three types of shrimp were found to contain 17 amino acids, with glutamic acid being the highest in content. Additionally, 26 kinds of fatty acids were detected in the three shrimps, with the highest content of polyunsaturated fatty acids and the lowest content of monounsaturated fatty acids. Therefore, the three shrimp species had their own strengths in muscle quality. E. carinicauda had a good texture; P.hardwickii had the highest nutritional value, and S. crassicornis had better color and flavor.
