中文摘要: 该文以不同的成膜时间(4、5、6、7、8 h) 与成膜温度(60、70、80、90、100 ℃) 为因素,研究不同成膜条件对海藻多酚-普鲁兰多糖可食用复合膜性能的影响。试验结果表明,固定成膜温度为80 ℃时,成膜时间为6 h 的可食用复合膜透光率、厚度和颜色参数达到最优,水溶性和水分含量分别达到最大值[(61.1±1.5)%和(14.7±0.9)%];固定成膜时间为6 h 时,成膜温度为80 ℃的可食用复合膜阻水性能、力学性能、厚度、透光率和颜色参数达到最优,其中拉伸强度和断裂伸长率分别达到最大值[(0.087±0.003) kN/m 和(55.5±3.4)%]。综上,成膜时间6 h 和成膜温度80 ℃为海藻多酚-普鲁兰多糖可食用膜制备的最佳条件。
Abstract:The effects of different film forming conditions on the performance of algae polyphenols-pullulan edible composite films were studied with different film-forming times(4, 5, 6, 7 h, and 8 h) and film forming temperatures(60, 70, 80, 90 ℃, and 100 ℃) as factors. The results showed that when the film formation temperature was 80 ℃, the light transmittance, thickness and color parameters of the film with a forming time of 6 h were optimal, and the water solubility and moisture content reached the maximum value(61.1±1.5)% and(14.7±0.9)%, respectively. When a film formation time was 6 h, the edible composite film produced at 80 ℃exhibited optimal water resistance, mechanical properties, thickness, light transmittance, and color parameters. Notably, the tensile strength and elongation at break achieved maximum values of(0.087±0.003) kN/m and (55.5±3.4)%, respectively. In conclusion, the film forming time of 6 h and the film forming temperature of 80 ℃ were the best conditions for the preparation of algae polyphenols-pullulan edible composite films.
