Abstract:From the perspectives of sensory quality，nutritional quality，and processing quality，this study reviewed the research progress on the quality of the highland barley，a unique agricultural product in the Qinghai-Tibet Plateau. The research status quo of the influence of environmental factors on the quality of the highland barley was discussed. The aim was to provide effective references for quality maintenance and improvement，the establishment of quality evaluation standards，as well as the transformation from ′quantity security′ to ′quality excellence′ and high-value development and utilization.
