Abstract:In order to explore the feasibility of wine variety identification and origin traceability，the contents of 37 polyphenols in wine made of three varieties of grapes（petite verdot，cabernet sauvignon，and marselan）from four major regions（Ningxia，Yantai，Gansu，and Xinjiang）were determined by ultra-performance liquid chromatography-triple quadrupole tandem mass spectrometry combined with multivariate statistical analysis.The results showed that there were significant differences in the contents of 22 and 28 polyphenols in wine made of different varieties of grapes and regions.16 characteristic polyphenol compounds such as caffeic acid，p-coumaric acid，ferulic acid，and taxifolin were screened out in wine made of different varieties of grapes by principal component analysis. A total of 15 characteristic polyphenol compounds such as naringin，myricetin，vanillic acid，and phloretin were screened in wine from different regions. Fisher discriminant analysis showed that the overall correct discriminant rates of back-generation test and cross test for wine made of different varieties of grapes were 100.0% and 91.9%，and those for wine from different regions were 100.0% and 97.4%.These results indicated that the difference in the fingerprint of polyphenol compounds could help effectively identify wine made of different varieties of grapes from different regions.
