中文摘要: 偏高水分玉米储藏难度大,品质劣变速度快,严格控制适当的储藏温度有利于延缓其品质劣变,提高其储藏品质。该试验选择水分含量为14.5% 的玉米作为偏高水分玉米样品,将其在不同温度下储藏6 个月,探究低温(15 ℃)、准低温(20 ℃)、常温(25 ℃)和高温(30 ℃)等不同温度对偏高水分玉米储藏品质的影响。结果表明,偏高水分玉米在15、20 ℃下储藏6 个月之后,品质保持良好;25 ℃下储藏6 个月时,其色泽、生活力、发芽势、发芽率均发生了不同程度地下降,玉米粉轻微老化,脂肪酸值为51.88 mg/100 g,呈宜存状态;30 ℃下储藏6 个月时,其色泽、生活力、发芽势、发芽率均剧烈下降,电导率迅速增加,玉米粉老化程度严重,脂肪酸值增至84.05 mg/100 g,呈重度不宜存状态。根据上述品质指标综合评价,建议粮库选择20 ℃储藏偏高水分(14.5%)玉米,可在保证玉米储藏品质的同时有效提高经济效益。
Abstract:The maize with high moisture content is prone to rapid deterioration during storage.Strictly controlling the temperature in storage can delay the deterioration and improve the storage quality of maize.The maize samples with the moisture content of 14.5% were stored at different temperatures(15 ℃,20 ℃,25 ℃,and 30 ℃)for 6 months.The results showed that the maize samples with high moisture content maintained good quality after 6 months of storage at 15 ℃and 20 ℃.After 6 months of storage at 25 ℃,the color,vitality,germination potential,and germination rate of maize all declined to varying degrees.In addition,the maize flour was slightly aged,with the fatty acid value of 51.88 mg/100 g,which indicated that 25 ℃was still suitable for storage.However,after being stored at 30 ℃for 6 months,the samples presented sharply declined color,viability,germination potential,and germination rate,rapidly increased electrical conductivity,serious aging of the flour,and the fatty acid value reaching 84.05 mg/100 g,which indicated that 30 ℃was unsuitable for maize storage.Considering all the above quality indicators,it was recommended that 20 ℃was suitable for storage of the maize with high moisture content(14.5%),which could improve the economic benefits and ensure the quality of maize.
