中文摘要: D-阿洛酮糖,作为D-果糖的C-3 差向异构体,是一种新型低热量甜味剂。目前多项研究已证明D-阿洛酮糖的食用安全性,且其已被美国食品和药物管理局批准用于食品行业。D-阿洛酮糖不仅能够作为低热量甜味剂用于饮料和膳食补充品中,还因其具有预防肥胖、糖尿病、动脉粥样硬化等生理功能,在健康、医疗等方面有着巨大的应用价值和潜力。该文就D-阿洛酮糖的理化性质、合成方法和其降血糖、减脂、抗动脉粥样硬化、抗氧化、神经保护等生理功能以及在食品和医疗领域的应用进行综述。
Abstract:D-psicose,as the C-3 isomer of D-fructose,is a new low-calorie sweetener.Various studies have proved the safety of D-psicose for human consumption,and it has been approved by the US Food and Drug Administration for application in the food industry.D-psicose can be used as a low-calorie sweetener in beverages and dietary supplements,and it has great application value and potential in health and medical treatment because of its physiological functions such as preventing obesity,diabetes,and atherosclerosis.This article reviewed the physicochemical properties and synthesis methods of D-psicose,its physiological functions containing hypoglycemia,fat reduction,anti-atherosclerosis,anti-oxidation,neuroprotection,and its application in food and medical fields.
