黑曲霉固态发酵对金银花多酚类物质释放及增效作用

中文摘要: 为促进金银花多酚组分释放,提高其抗氧化、抗过敏能力,该文利用黑曲霉对金银花进行固体发酵。结果显示,以总多酚、总黄酮含量为参考指标,选择6 d 作为最优发酵时间。发酵0~6 d,黑曲霉发酵金银花醇提物DPPH·清除率由61.25%提升至84.57%,·OH 清除率由23.43%提升至30.10%,ABTS+·清除率由32.09%提升至55.06%,总还原力由0.730 9 提升至0.826 9;透明质酸酶抑制率由13.51%提升至64.86%。总多酚含量由76.60 mg/g 提升至97.56 mg/g,总黄酮含量由20.76 mg/g 提升至24.12 mg/g,总皂苷含量由3.50 mg/g 提升至4.26 mg/g。同时,测得黑曲霉所产纤维素酶、β-葡萄糖苷酶和木聚糖酶酶活的最高值分别为11.70、15.78、32.39 IU/g。该研究表明黑曲霉固态发酵金银花,能够促进金银花中多酚物质释放。

Abstract:To promote the release of polyphenols from Lonicerae japonica(L.japonica)and improve the antioxidant and antiallergic abilities of L.japonica,Aspergillus niger(A.niger)was used to treat L.japonica by solidstate fermentation.The results showed that six days were the optimal fermentation time based on the contents of total polyphenols and flavonoids.The fermentation process lasted for six days,and the DPPH·scavenging rate increased from 61.25% to 84.57%;the·OH scavenging rate increased from 23.43% to 30.10%;the ABTS+·scavenging rate increased from 32.09% to 55.06%,and the total reducing power increased from 0.730 9 to 0.826 9.The inhibition rate of hyaluronidase increased from 13.51% to 64.86%.The content of total polyphenols increased from 76.60 mg/g to 97.56 mg/g;the content of total flavonoids increased from 20.76 mg/g to 24.12 mg/g,and the content of total saponins increased from 3.50 mg/g to 4.26 mg/g.Meanwhile,the highest activities of cellulase,β-glucosidase,and xylanase produced by A.niger were 11.70,15.78,and 32.39 IU/g,respectively.This study showed that the solid-state fermentation of L.japonica by A.niger could promote the release of polyphenols in L.japonica.
