中文摘要: 随着消费者对食品安全的要求逐渐提高,天然食品保鲜膜材料的开发逐渐被重视。该文以丝瓜络为原料,通过2,2,6,6-四甲基哌啶-氮-氧化物(2,2,6,6-tetramethyl-1-piperidinyloxy,TEMPO)氧化法制备平均宽度为7.3 nm、平均长度为156.3 nm 的纤维素纳米纤维(cellulose nanofibrils,CNF)。以京尼平(genipin,GP)为交联剂,将CNF 分别按照壳聚糖(chitosan,CS)质量的0%、1%、2%、3%、6%与CS 交联,制备CS-GP-CNF 复合膜。复合膜的表面基本均一、光滑且无气泡,随着CNF 添加量的增加,复合膜表面出现少量结节形貌。另外,CS-GP-CNF 复合膜具备良好的水蒸气阻隔性能,各样品均低于1.15×10-11 g/(s·m·Pa)。将样品CS-GP-CNF6 应用于鸡肉保鲜,结果表明,CS-GP-CNF6 复合膜能够有效延缓4 ℃贮藏期间鸡肉的菌落总数和挥发性盐基氮含量的上升速度,有效延长其保质期。因此,CS-GPCNF 复合膜可以作为一种潜在的食品包装膜应用于食品保鲜。
Abstract:With the gradual increase in consumers' demand for food safety,the development of natural food cling film materials has been gradually emphasized.In this paper,cellulose nanofibrils(CNF)with an average width of 7.3 nm and an average length of 156.3 nm were prepared by the oxidation of 2,2,6,6-tetramethyl-1-piperidinyloxy(TEMPO)using loofah as raw material.The CS-GP-CNF composite membrane was prepared by cross-linking CNF with CS according to 0%,1%,2%,3%,and 6% of the mass of chitosan(CS),and genipin(GP)was used as cross-linking agent.The surface of the composite membrane was basically homogeneous,smooth,and bubble-free,and a small amount of nodular morphology appeared on the surface of the composite membrane with the increase in CNF addition.In addition,the CS-GP-CNF composite membranes possessed good water vapor barrier properties,which were all lower than 1.15×10-11 g/(s·m·Pa).CS-GP-CNF6 was applied to preserve chicken.The results showed that the CS-GP-CNF6 composite film could effectively slow down the rise of colony number and volatile saline nitrogen content of chicken during storage at 4 °C and effectively prolong its shelf life.Therefore,CS-GP-CNF composite film could be used as a potential food packaging film for food preservation.
