阿胶速溶粉喷雾干燥制备工艺优化

中文摘要: 以阿胶(不含豆油)为主料,菊粉、赤藓糖醇、抗性糊精、浓缩枣汁为辅料,单因素试验为基础,通过响应面试验优化喷雾干燥法制备阿胶速溶粉,并与市售阿胶粉进行感官与溶解度比较,通过扫描电镜对微观结构进行对比。结果表明:最佳喷雾干燥条件为进风流量37.11 m3/h、入口温度149℃、进料流量45.34 mL/min、可溶性固形物含量22.21%,在此条件下,出粉率为92.31%。与市售阿胶粉相比,最佳条件制备所得阿胶速溶粉颗粒外表相对光滑,内部呈中空结构;阿胶速溶粉平均溶解时间为32.7 s,远小于市售阿胶粉溶解时间(61.27 s)。经专业感官评判,最佳条件下制得的阿胶速溶粉外观呈浅红色,颗粒细腻,冲溶后液体透亮,不起油膜,带有红枣香气,无焦糊、腥苦、刺激等异味。
Abstract:Instant Colla corii Asini powder was prepared using Colla corii Asini(soybean oil free) as the main ingredient and inulin,erythritol,resistant dextrin,and concentrated jujube juice as the auxiliary ingredients.Single-factor and response surface experiments were used to optimize the spray-drying conditions for instant Colla corii Asini powder preparation.Furthermore,sensory evaluation and solubility analysis comparisons were performed with commercial Colla corii Asini powder,and the microstructures of the preparations were compared by scanning electron microscopy.The results showed that the optimum spray-drying conditions were an inlet air flow of 37.11 m3/h,an inlet temperature of 149 ℃,a feed flow of 45.34 mL/min,and soluble solids content 22.21%.Under this condition,and the powder yield was up to 92.31%.Compared with commercial products,the prepared powder was relatively smooth in appearance and hollow in the interior.Due to its special structure,the dissolution time for the prepared instant Colla corii Asini powder was 32.7 s,which was much shorter than the dissolution time of the commercial Colla corii Asini powder (61.27 s).The sensory evaluation showed that the prepared instant Colla corii Asini powder under the optimum conditions was light red with fine particles.The solution was transparent,without an oily film,after dissolving.It had an aroma of red dates,and had no burnt,fishy,bitter,irritating,or other odors.
