中文摘要: 随着我国水果采后保鲜研究的不断深入,乙醇作为保鲜剂在采后保鲜中应用广泛,采用乙醇处理采后水果能有效延缓其货架期。该文简要综述乙醇处理采后水果的两种不同方式(乙醇熏蒸处理、乙醇复合保鲜)对其内在品质与外在品质及采后抗病虫害的影响。最后,通过综合分析乙醇在水果采后保鲜方面的应用研究现状、存在的问题及前景,进一步为乙醇在水果采后保鲜中的应用提供依据。
Abstract:With the deepening of the research on postharvest preservation of fruits in China,ethanol is widely used as a preservative in postharvest preservation.Treating postharvest fruits with ethanol can effectively extend their shelf life.This paper briefly reviewed two ethanol treatment methods(ethanol fumigation treatment,ethanol compound preservation) of postharvest fruits,in terms of fruit internal and external quality and postharvest resistance to pests and diseases.Finally,the research status,existing problems and prospects of this field were expounded,which would provide a basis for the application of ethanol in fruit preservation after harvest.
