中文摘要: 为研究凝结芽孢杆菌BC99代谢产物的抑菌特性,该文考察凝结芽孢杆菌BC99代谢产物粗品在不同预处理pH值、不同温度、不同酶处理以及凝结芽孢杆菌BC99菌液对大肠埃希菌CVCC 1527、鼠伤寒沙门氏菌CVCC 2228、金黄色葡萄球菌CVCC 4098、猪霍乱沙门氏菌CVCC 503的抑菌效果及抑菌物质的特性。结果表明凝结芽孢杆菌BC99抑菌物质主要为胞外物质。代谢产物粗品对大肠埃希菌CVCC 1527、鼠伤寒沙门氏菌CVCC 2228、金黄色葡萄球菌CVCC 4098、猪霍乱沙门氏菌CVCC 503均有一定的抑制效果,其抑菌谱较广;对抑菌物质特性进行分析,发现凝结芽孢杆菌BC99的代谢产物粗品在预处理pH值为6、温度为37℃时,代谢产物粗品抑菌效果最好;凝结芽孢杆菌BC99的代谢产物粗品对胰蛋白酶、胃蛋白酶、蛋白酶K等多种蛋白酶较为敏感,而对过氧化氢酶不敏感,初步判断凝结芽孢杆菌BC99抑菌物质的主要成分可能是对蛋白酶敏感的细菌素类代谢产物。
Abstract:The antibacterial properties of the metabolites of Bacillus coagulans BC99 were studied by investigating their antibacterial effects on Escherichia coli CVCC 1527,Salmonella typhimurium CVCC 2228,Staphylococcus aureus CVCC 4098 and Salmonella choleraesuis CVCC 503 with different pretreatment pH values,temperatures,enzyme treatments and Bacillus coagulans BC99 bacterial solutions.The results showed that the antibacterial metabolites of Bacillus coagulans BC99 were mainly extracellular substances that had certain inhibitory effects on the test organisms.The antibacterial spectrum was broad.An analysis of the characteristics of antibacterial substances indicated that the crude metabolites of Bacillus coagulans BC99 had the best antibacterial effect with a pretreatment pH value of 6 and at a temperature of 37℃.The former were sensitive to trypsin,pepsin,protease K,and other proteases but not to catalase.Preliminary conclusions suggest that the main component of the bacteriostatic substances of Bacillus coagulans BC99 may be proteasesensitive bacteriocins.
