中文摘要: 水产品营养价值丰富且味道鲜美,深受消费者喜爱。然而随着社会工业化的快速发展,水域环境中重金属的污染情况日渐加重,水产品中重金属的含量受到社会各界的广泛关注,成为限制水产品食用安全的重要原因之一。文章介绍了居民日常消费水产品的种类及其营养特点,并对重金属的来源与危害、水产品重金属含量的特点和控制措施做了综述,最后总结与展望了重金属的治理建议。

Abstract:The nutritional value of aquatic products are rich and taste delicious,so it is loved by consumers.However,with the rapid development of social industrialization,pollution of heavy metals in aquatic environment has deteriorated increasingly.The content of heavy metals in aquatic products had attracted wide attention from all sectors of society,and it had become one of the important reasons restricting food safety of aquatic products.The types of aquatic products that residents consume in daily life and nutrient characteristics were introduced;the origin and harm of the heavy metals,characteristics of heavy metals content in aquatic products and control measures were summarized in this paper.The management of heavy metals are summarized and prospected in the last.
