不同地区黑木耳多酚提取及抗氧化活性的研究

中文摘要: 对云南、福建、黑龙江 3 个不同地区的黑木耳(Auricularia auricula)进行多酚提取,并比较其抗氧化活性。研究 结果显示:黑龙江黑木耳多酚粗提物的还原能力、对 DPPH·的清除能力(IC50=4.12 mg/L)及对 O2-·的清除能力(IC50=15.17 mg/L)最强,云南黑木耳多酚粗提物则在对羟自由基的清除能力(IC50=302.52 mg/L)和抗脂质过氧化的能力(IC50=23.67 mg/L)最强。总体来说,黑龙江和云南的黑木耳抗氧化活性要高于福建黑木耳,这可能与不同地区黑木耳的多酚成 分有关。

Abstract:Auricularia auricula from Yunnan, Fujian and Heilongjiang were extracted for polyphenols and their antioxidant activities were compared. The results showed that the reducing capacity, scavenging ability of DPPH·(IC50=4.12 mg/L) and scavenging capacity of O2-·(IC50=15.17 mg/L), polyphenol crude extracts from the Heilongjiang's Auricularia auricular were the strongest. Yunnan Auricularia auricula polyphenols extract in the scavenging capacity of hydroxyl radical (IC50=302.52 mg/L) and lipid peroxidation (IC50=23.67 mg/L) are the strongest. In general, the antioxidant activity of Auricularia auricula from Heilongjiang and Yunnan was higher than that of Fujian black fungus, which may be related to the content of polyphenols in different regions.
