中文摘要: 多指标评价药食两用核桃蛋白及多肽的抗氧化活性。利用 DPPH·﹑O2-·﹑总还原能力和·OH 4 种常用体外抗氧 化活性模型,以谷胱甘肽(GSH)为对照,测定核桃蛋白及多肽抗氧化活性。在实验范围内,核桃蛋白及多肽的抗氧化活 性与浓度呈量效关系,且核桃多肽对 DPPH·和 O2-·清除能力显著,抗氧化活性达到 GSH 的 80 %以上,对·OH 清除能力 亦达到 GSH 的 50 %以上。核桃蛋白及多肽均具有一定的抗氧化能力,且核桃多肽的抗氧化活性较蛋白更为显著。
Abstract:To evaluate the antioxidant activity of walnut protein and polypeptide. Compared with GSH, the an- tioxidant activity of walnut protein and polypeptide was measured by using the DPPH radical scavenging capaci- ty, superoxide anion radical scavenging capacity, deoxidization capacity, and hydroxyl radical scavenging ca- pacity. Within the experimental concentration, the antioxidant activity of walnut protein and polypeptide showed a dose-dependent manner. Moreover, the walnut polypeptide significantly exhibited DPPH radical scavenging ca- pacity and superoxide anion radical scavenging capacity, with more than 80 % of GSH, and the hydroxyl radical scavenging ability of polypeptide reached more than 50 % of GSH. Walnut protein and polypeptide were deter mined to have obvious antioxidant activity, and the antioxidant activity of walnut polypeptide was more significant.
