中文摘要: 以钙结合率为指标,对从鱼糜漂洗废水中回收的肌浆蛋白肽(recycled myogenpeptide, RMP)与钙离子的结合 条件进行优化。最佳结合条件为 pH9、35 ℃、钙离子浓度 4 mmol/L、RMP 浓度 5 g/L、反应时间 1h,此时钙结合率为85.00 %。RMP-Ca 复合物具有较好的酸碱稳定性,在 pH 5~9 范围内钙保留率高达 85 %以上。一定的加热处理会导致 RMP-Ca 复合物钙保留率下降,经过 121.1 ℃高温处理后钙还能保留 70.14 %。RMP-Ca 复合物具有很好的抗消化性, 消化后钙保留率高达 95.31 %。
Abstract:Based on binding rate, the conditions ofrecycledmyogenpeptide (RMP) from surimi wash water binding calcium were optimized as follows: RMP concentration 5 g/L, calcium concentration 4 mmol/L, tem- perature 35 ℃, pH 9 and reaction time 1 h. In these conditions the binding rate of RMP was 85.00 %. RMP-Ca complex owned good ability to resist pH with more than 85 % calcium retention rate at the pH range of 5-9. Af- ter heated at 121.1 ℃ for 15 min, the calcium retention rate was as high as 70.14 %. RMP-Ca complex also could resist digestion by pepsin and trypsin with 95.31 % calcium retention rate after digestion.
