中文摘要: 本文介绍西番莲果汁的种类与生产工艺，并对果汁提取方法、电渗析降酸、澄清方法、稳定性优化等方面进行综述。同时探讨该果汁生产目前存在的问题，旨在为西番莲果汁的商业化生产提供参考。

Abstract:The aim of this paper is to review progress made in the research of passion fruit juice，including types，manufacturing processes，deacidification，clarification and stability.The existing problems of this juice and future development are also discussed.
