中文摘要: 以红蘑、红枣和枸杞为主要原料,开发一种饮料。采用感官评定,通过正交试验,探讨红蘑饮料的加工工艺和最 佳配方,采用运动生物化学的方法做小鼠实验研究,检测其抗疲劳活性。结果表明按 100 mL/瓶的规格,该饮料的最佳配 方为红蘑汁、红枣汁、枸杞汁的体积比为 2 ∶ 2 ∶ 1,白砂糖 3 g,柠檬酸 0.15 g。该饮料色泽鲜艳、酸甜适中、风味纯正。红蘑 饮料可显著延长小鼠的力竭游泳时间,能提高小鼠体内肝糖原的储备量,降低小鼠血乳酸和血清尿素氮含量。表明该饮 料具有一定的抗疲劳作用。
Abstract:To development a kind of beverage, the main materials were Gomphidius rutilus, jujube and wolf- berry. Based on sensory evaluation and orthogonal experiments, the progressing technology and the optimum formula of the beverage was discussed. To investigate the anti-fatigue effects of the beverage by employing usual ways in biochemistry of sports. The results indicated that the optimum volume proportion of Gomphidius rutilus, jujube and wolfberry was 2 ∶ 2 ∶ 1, sugar and citric acid were 3 g and 0.15 g, respectively. The beverage had characteristics of beautiful color, sweet and sour taste, and pure flavor. The results showed that the beverage could significantly extend the swimming time of mice, improve the mice hepatic glycogen reserves, reduce lac- tic acid and urea nitrogen content of the blood. The beverage has anti-fatigue activity.
