中文摘要: 随着连锁式或加盟店式的餐饮业不断发展，中央厨房在保证连锁餐饮店的经营规范化中发挥着重要作用。本文综述了中央厨房的生产优势、生产功能、经营模式、产业发展现状、产业发展存在的问题以及发展中央厨房的必要性，并对我国中央厨房产业的发展趋势进行了展望，提出了相应的发展对策。
Abstract:As the development of chain restaurant, the central kitchens play an important role in ensuring the standardized management of chain restaurant. This paper reviews the production advantage、the production function、management model、development status、existent problem on central kitchens and the necessity on promoting the development of central kitchens. At the same time, the development trend and the corresponding countermeasure were also discussed.
