中文摘要: 刺梨是云贵地区特有的野生植物,含有丰富的维生素C、黄酮、多糖和超氧化物歧化酶(superoxide dismutase,SOD)等活性物质,目前研究发现其具有促进胃肠道消化、调节人体免疫功能、延缓衰老、抑制癌细胞增殖等生物学功能,以刺梨为原料开发的刺梨食品深受广大消费者喜爱。该文梳理近年来有关刺梨功能活性成分的最新研究,概述干制类、发酵类、罐装类、糖制类刺梨食品的加工工艺和开发现状,以及刺梨作为特殊人群食品的开发前景,以期为刺梨的开发应用提供科学依据。

Abstract:Rosa roxburghii is a unique wild plant in Yungui area,which riches in vitamin C,flavonoids,polysaccharides and superoxide dismutase (SOD)and other active substances.At present,it has been found to promote gastrointestinal digestion,regulation of human immune function,anti-aging,inhibit cancer cell proliferation and other biological functions.Thorn pear as raw material developed thorn pear food by the vast number of consumers love.The recent research on the functional active ingredient of Rosa roxburghii was reviewed and the processing technology and development status of the dried,fermented,canned and pear-like foods,as well as the prospect of the development of Rosa roxburghii as a special crowd,were summarized to provide scientific basis for the development and application of Rosa roxburghii.
